BLUE NINJA TRUFFLES

These truffles are a quick + easy treat that you can mix up with just a few simple ingredients.

They have a sweet and rich taste from the combination of dates, coconut, and chocolate with the nice subtle undertone of earthiness from the addition of Blue Ninja ( blue matcha) which is made from blue butterfly pea flowers. You could even say they’re easy PEAsy to make! ;)

The hardest part about making these is not eating them all at once!

Blue Ninja Chocolate Coconut Truffle Recipe

Ingredients

  • 260g pitted Medjool dates

  • 25g raw cacao or cocoa powder

  • 60g ground almonds

  • 15g unsweetened desiccated coconut 

  • 1 tsp Blue Ninja powder

  • 1 tsp Blue Ninja powder + 30g desiccated coconut for coating

Directions

  1. Blend dates to a paste in your food processor. 

  2. Add cacao powder, ground almonds, coconut and Blue Ninja powder.

  3. Blend until the mixture comes together in a ball.

  4. Divide into 14 even-sized balls and roll between the palms of your hands so they are nice and smooth.

  5. Mix together the remaining blue ninja powder with desiccated coconut in a bowl.

  6. Roll each truffle in the coconut blue ninja mix, pressing it a little into the truffle.

  7. Store in the fridge for up to two weeks in a sealed container.
